Strict avoidance of food allergens \u2014 and early recognition and management of allergic reactions to food \u2014 are important measures to prevent serious health consequence.<\/p>\n<div style=\"clear: both; margin-bottom: 20px;\"><\/div>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-16270\" src=\"http:\/\/foodsafetytrainingcertification.com\/wp-content\/uploads\/2017\/05\/foodallergies.png\" alt=\"\" width=\"1024\" height=\"482\" \/><\/p>\n<div style=\"clear: both; margin-bottom: 20px;\"><\/div>\n<p>While more than 160 foods can cause allergic reactions in people with food allergies, the law identifies the eight most common allergenic foods. These foods account for 90 percent of food allergic reactions, and are the food sources from which many other ingredients are derived.<strong><em>The eight foods identified by the law are<\/em><\/strong><em>:<\/em><\/p>\n<ol>\n<li>Milk<\/li>\n<li>Eggs<\/li>\n<li>Fish\u00a0(e.g., bass, flounder, cod)<\/li>\n<li>Crustacean shellfish\u00a0(e.g., crab, lobster, shrimp)<\/li>\n<li>Tree nuts\u00a0(e.g., almonds, walnuts, pecans)<\/li>\n<li>Peanuts<\/li>\n<li>Wheat<\/li>\n<li>Soybeans<\/li>\n<\/ol>\n<p>These eight foods, and any ingredient that contains protein derived from one or more of them, are designated as\u00a0\u201cmajor food allergens\u201d by FALCPA.<\/p>\n<div style=\"clear: both; margin-bottom: 20px;\"><\/div>\n\n<div style=\"clear: both; margin-bottom: 20px;\"><\/div>\n<h3>FDA\u2019s Role:\u00a0Labeling<\/h3>\n<p>To help Americans avoid the health risks posed by food allergens, FDA enforces the Food Allergen Labeling and Consumer Protection Act of 2004 (the Act). The Act applies to the labeling of foods regulated by FDA which includes all foods except poultry, most meats, certain egg products, and most alcoholic beverages which are regulated by other Federal agencies. The Act requires that food labels must clearly identify the food source names of any ingredients that are one of the major food allergens or contain any protein derived from a major food allergen.As a result, food labels help allergic consumers identify offending foods or ingredients so they can more easily avoid them.<\/p>\n<h3>Video: Food Allergies &#8211; Reducing the Risks<\/h3>\n<p><iframe loading=\"lazy\" src=\"https:\/\/www.youtube.com\/embed\/PXxZlcrGFP0\" width=\"713\" height=\"430\" frameborder=\"0\" allowfullscreen=\"allowfullscreen\"><\/iframe><\/p>\n<h3>Severe Food Allergies Can Be Life-Threatening<\/h3>\n<p>Following ingestion of a food allergen(s), a person with food allergies can experience a severe, life-threatening allergic reaction called\u00a0<strong>anaphylaxis<\/strong>.<br \/>\n<strong>This can lead to:<\/strong><\/p>\n<ul>\n<li>constricted airways in the lungs<\/li>\n<li>severe lowering of blood pressure and shock (\u201c<strong>anaphylactic shock<\/strong>\u201d)<\/li>\n<li>suffocation by swelling of the throat<\/li>\n<\/ul>\n<p><strong>Each year in the U.S., it is estimated that anaphylaxis to food results in:<\/strong><\/p>\n<ul>\n<li>30,000 emergency room visits<\/li>\n<li>2,000 hospitalizations<\/li>\n<li>150 deaths<\/li>\n<\/ul>\n<p>Prompt administration of epinephrine by autoinjector (e.g., Epi-pen) during early symptoms of anaphylaxis may help prevent these serious consequences.<\/p>\n<div style=\"clear: both; margin-bottom: 20px;\"><\/div>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-18205\" src=\"http:\/\/foodsafetytrainingcertification.com\/wp-content\/uploads\/2018\/04\/Epinephrine-Injection.jpg\" alt=\"\" width=\"1194\" height=\"682\" \/><\/p>\n<div style=\"clear: both; margin-bottom: 20px;\"><\/div>\n<h3>Know the Symptoms<\/h3>\n<p>Symptoms of food allergies typically appear from within a few minutes to\u00a0 2 hours after a person has eaten the food to which he or she is allergic. <strong>Allergic reactions can include: <\/strong><\/p>\n<ul>\n<li>Hives<\/li>\n<li>Flushed skin or rash<\/li>\n<li>Tingling or itchy sensation in the mouth<\/li>\n<li>Face, tongue, or lip swelling<\/li>\n<li>Vomiting and\/or diarrhea<\/li>\n<li>Abdominal cramps<\/li>\n<li>Coughing or wheezing<\/li>\n<li>Dizziness and\/or lightheadedness<\/li>\n<li>Swelling of the throat\u00a0and vocal cords<\/li>\n<li>Difficulty breathing<\/li>\n<li>Loss of consciousness<\/li>\n<\/ul>\n<div style=\"clear: both; margin-bottom: 20px;\"><\/div>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-18206\" src=\"http:\/\/foodsafetytrainingcertification.com\/wp-content\/uploads\/2018\/04\/food-allergies-symptoms.jpg\" alt=\"food-allergies-symptoms\" width=\"1126\" height=\"549\" \/><\/p>\n<div style=\"clear: both; margin-bottom: 20px;\"><\/div>\n<p><strong>Mild Symptoms Can Become More Severe<br \/>\n<\/strong>Initially mild\u00a0symptoms\u00a0that occur after ingesting a food allergen are not always a measure of mild\u00a0severity. In fact, if not treated promptly, these symptoms can become more serious in a very short amount of time, and could lead to\u00a0<strong>anaphylaxis.<\/strong><\/p>\n<div style=\"clear: both; margin-bottom: 20px;\"><\/div>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-18207\" src=\"http:\/\/foodsafetytrainingcertification.com\/wp-content\/uploads\/2018\/04\/food-allergies-allergy.jpg\" alt=\"\" width=\"548\" height=\"894\" \/><\/p>\n<div style=\"clear: both;
